The Scale-up visa is flexible on activities. Alongside your sponsored role you can study (some courses need an ATAS certificate), do voluntary work, and take on extra employment.
The key limit is timing: in your first six months you must be working for your sponsor in the qualifying role, so extra activities should not displace that. After six months the restrictions ease considerably and you can even become self-employed. You cannot, however, claim public funds at any point.
