You must work for your sponsor in the qualifying role for the first 6 months, but after that you can change jobs or employers without telling the Home Office.
The Scale-up route is unusual because it gives you freedom after a short tie-in period. For the first six months you must remain in the sponsored job that met the salary and skill requirements.
Once that initial six months has passed, you no longer need a sponsor and can change employer, become self-employed, or work in a different field without applying for a new visa. This flexibility is one of the main attractions of the route compared with the more tightly tied Skilled Worker visa.
